Namba

The sushi rice is Koshihikari grown within the prefecture, with temperature and water content adjusted so as not to let it get sticky. The chef uses light seasoning as he wants it to go well with the many kinds of white-fleshed fish and crustaceans. Eyeing the characteristics of the toppings, he decides whether to emphasise the freshness or add his own touches. Nikiri and boiled-down vinegar with salt is brushed over the nigiri.
